Help with cakes

I am new to baking and am interested in baking cakes . Problem is that whenever I bake from scratch, my cakes have this eggy smell and slight aftertaste which is not masked by any essences. I do not have this problem with cake-mixes. What am I doing wrong ? I try and follow the recipe as accurately as possible. The texture and overall taste is good and only problem is the smell and slight aftertaste. Any tips and suggestions are highly appreciated .:slight_smile:

I'm not an expert but I've been baking for a while now. So I might be able to help u, do u put vanilla essence?

blend your eggs really well with an electric mixer with the other liquid ingredients

when you add the liquid ingredients to the dry- make sure it's mixed thoroughly but don't over mix- the egg taste might be coming from if you're overmixing the batter it turns the crumb of the cake more coarse and bread-like

oh, and also- check to make sure your eggs are really fresh

maybe try organic eggs and/or pasteurized eggs to see if it helps also

Always keep eggs at room temp.
Mix eggs for about a min & then add sugar to it slowly while beating with an electric mixer. It becomes fluffy and there might not be any smell. I normally do this,when it's fluffy I add vanilla essence, oil beat well. Add the dry mixture to it and mix well :)

When I bake from scratch I always start off with mixing my eggs and sugar really well. My cakes have never tasted like eggs. I always add 2 table spoons of sour cream in my batter regardless of what kind of cake I'm making. It makes the cake very moist and delishh.
Most recipes call for vanilla essence, don't skimp on it! And as luvblingz said, always make sure you're using fresh eggs!! I store mine in the fridge, always.

Yep. It is the egg taste. I used vanilla essence to no effect. I will try the organic eggs now luvblingz.
mrscupcake, do you just fold the dry ingredients into the well beaten egg-butter-sugar combo till mixed well or do you use the electric mixer again on the batter ? If so , for roughly how long ? wendydarling , I will definitely try the sour cream when I bake this weekend.

Mine is egg n sugar mixture only, Not butter!
I mix in dry ingredients using an electric mixer :)
Don't have a specific time,I just make sure everything is mixed well.

are you melting the butter before you add it? if so, the heat from the butter could be cooking your eggs a bit, therefore you'd be putting semi-scrambled eggs into your cake and that would cause an eggy taste
