Help me pls...need easy recipes

my problem is that i want to cook but i cant..lets try today with something easy..please help me, i need a easy chicken recipe and any dessert to that.

Chicken - 1 kg
Onions - 2
Tomatoes - 2
Green chillies - 2
Ginger - garlic paste - 2 tbsp
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Black pepper powder - 1 tsp
Bay leaves - 2
Green cardamom seeds - 7
Cloves - 7
Garam masala - 1/2 tsp
Yogurt - 1/2 cup
Oil - 2/4 cup
Salt to taste

method:-

Wash, clean and cut the chicken into small pieces. Heat oil in a pan and fry onions to a golden color. Add bay leaves, cloves, black pepper, green cardamom, turmeric powder, green chillies and fry for a minute. Then add garlic paste, ginger paste, garam masala, chili powder, chopped tomatoes and salt and again for few minutes. Then add the chicken and fry for 5 mins. Then add the yogurt and let it boil. Pour in just enough water to cover the chicken korma and allow to cook until the chicken is almost tender.

these two recipes usually take 15-20 minutes of time,,and are very easy to cook..

nuzhat... hang in there. It takes time. no one learnt in a day! Learn all the basic recipes and recipes which are most often used when guest come over at ur place. I still remember I was in grade 11 when my mom taught me some dishes. I learnt them in a week and then never have I gone back and asked how to make them. I remembered them cus my mom cooked infront of me. Another thing is, its all about experimenting. There are no hard and fast rules for cooking... just follow basics of any recipes and add or delete acc. to your taste. I learnt the following in a week:
1) Biryani (MUST)
2) Meat Korma
3) Keema
4) Tahiri
5) Mixed vegetables
6) Aloo Gosht (learn this and you can make any salan... gosht with bhindi, arvi, palak, chanay ki dal etc)
Search the internet to find recipes. You will find plenty! Best of luck and keep cooking!

^^ I agree with Mall. Desi salans which call for vegetable+meat have the same basic recipe for making the salan.
Daal +chawal are also very easy to make since most daals ask for the same basic ingredients.
Also matar pulaao is super easy to make since it takes maybe 30-45 minutes to make.

/\ Yeah...she should first dig in the basics like making masala (gravy) for various additions...

Oh well...she can also start from boiling or frying and egg or making an omlette... :D

Mattar Pilau

1 level large mug of rice
2 level large mugs of water
2 onions thinly sliced
3 or 4 tablespoons of oil
2 tablespoon butter
SPICES: 2 cloves (lavang), 1 black elaichi, 1 green elaichi, 2 bay leaves, teaspoon of zeera, stick of dalchini, teaspoon of garam masala.
teaspoon of salt (or to your taste)
Half cup of frozen peas 9or more if u like)

Wash rice thoroughly 6 times until water clear. Leave to soak in water.

Fry onions in oil until they turn the colour of milk chocolate and smell fragrant.
Add the spices and stir for 3 seconds.
Add the butter and stir until melted.
Add the 2 cups of water and salt.
When the liquid is boiling, add the peas and drained rice (Sieve it).
Bring back to a rapid boil on a high heat, stir ONCE only.
Put the lid back on, and after one minute, stir once and replace lid. Reduce the heat to the lowest setting.
DO NOT REMOVE THE LID.
Leave on low heat for 10 minutes.
Switch off heat and keep lid on for 10 minutes.
Pilau should now be cooked, fluff up with a spoon or fork so they grains are separated.

Khanapakana.com has some good recipes of various chefs/people that come on tv. I just look at Farah's or occassionally Rahat's, you can see the video as well as follow recipe so it becomes much more easier for frst time or learner cooks. Other than that, desicookbook.com has some basic pakistani dishes too.

Start with simple dishes. Mine was keema aaloo. Different sort of Pilaou such as matar pilaou, chicken pilaou, channa pilaou, keema pilaou are very simple too, you just need to learn 1 and you can make all these with very less variations and provides you variety too, one week one aort of rice from above, the second week another.

Another simple recipe which i completely love is aaloo channey (chick peas) cooked. It is delicious and very easy.

Boil Chick peas or to make it easier, buy the ones which are already boiled and come in cans.

In oil, fry ginger (more than you'd put in a normal salan), garlic till golden brown.
In a chopper (food processor), grind 2/3 tomatoes and 2/3 green chillies. add this mixture to the fried ginger garlic and add very little water. Add red chilli powder 1 tsp (or according to taste), 1 tsp salt (or according to taste), and some haldi (turmeric powder) and bhoon/fry for a bit.
Add potatoes (cut in to whatever size you want, i use baby or new potatoes which are better for health), 2tsp cumins seeds, 2tsp ground corriander powder (sookha dhaniyya), 1tsp kalwanji and a small piece of cinemon stick (bark) and bhoon for a while till you can smell the spices.
If chick peas were not fully boiled earlier, add them at this point and bhoon for a bit more. add some water and let it cook on low heat till potatoes are cooked and mixed.
Add corriander and green chillies before serving!
