Re: help chicken biryani plz
apologies ... just saw your note ...
can you write down the exact procedure of how you made the rasmalai .. and I will let you know where you might have gone wrong ...
Re: help chicken biryani plz
okay no prob
i have mix the ratio of rasmalai as u explaied and made balls and throw them in milk now they did puff up and i was checking on them but they do puff from outer side but from inside they are raw and hard.
i dont know where i go wrong and one thing do the ingrediants should be at room tempreture like eggs were cold when i used them and also mixture was crumbly hard when i add one egg so use another half and for makink balls it were not rolling with soft hands so i use to roll them with hard hands and i use the measuring cup of one cup.
many thanks will be very appriceted if u help.

Re: help chicken biryani plz
Ok , this is what could have gone wrong :
1- you can know something is wrong when you feel the mixture isnt soft enough ... what actually happens is that the milk powder absorbs the ingredients but is still dry and doesnt have enough moisture .. moisture is needed to be able to stick to a ball shape ...
you did the right thing by adding some more egg .. but if it was still not soft enough .. then you should have added a tablespoon of oil in ... and that should have sorted it out ... if still its hard and doesnt form a ball easily , it means it needs just a few drops of whole milk .. and as you put each drop in , make sure you crumble it all ... keep crumbling it with a light hand ..
2- yes the eggs act better when they are used at room teperature ... they create just the right amount of moisture for the rasmalai's ..
3- did you make sure the milk wasnt boiling hot when you added the rasmalai's in? and did you also lower the flame to the minimum? and did you keep the pot covered while the rasmalai's were cooking?
The total time I cook the rasmalai's is about 5-8 minutes .. after that they start breaking up ... so you have to keep an eye on them .... try it again and let know how it went ...
