Let's say they did exist. Don't you think the stories might've been over exaggerated a bit? So much so that everytime a person want to express his/her feelings to someone else, we immediately think of these stories and think that they were the biggest experts in this, when there were many before them who loved each other too?

Nemo bhai, true, and also something disappointing about people who are eager to speak, and who turn out to be insecure is a very unpleasant reality.
so, whether it is the people who were attracted to each other and their own sense of timidness overwhelms them or their societal or familial barrier which did not let them be together, still it does not make sense why they would be so incapable if they so knew they liked each other.

People make mistakes. And we constantly keep learning throughout our lives. Some learn without falling down and with experience of others, some learn by falling down and through his/her own experience. When you realize that you have made a mistake and nothing can be done about it, you should try to correct the situation by learning from that mistake and using it for future :)

I must say that everytime I hear someone singing heer written by Waris Shah, it takes me into a different world. Heer and Ranjha appears in my imagination and the entire world looks so magical!
