olive oil in general and extra virgin especially are not good for frying, low smokepoint
you can use regular oliveoil in slow low heat cooking, but try canola instead.

we at home have red meat only once a week. for the rest of the days we have vegetables , daals and chicken (1 or 2 times). have paratha once in 2 weeks and have normal without oil roti with salans. less salt & less oil ! and less deserts :)
