Healthy Bulk Meals

Ladies who work or just don’t have the time to cook every single day…what dishes keep well enough to last two-three days? But are also healthy? Cook one day, take some for work and have at least dinner to come home to.

No rice dishes.

Whole Grain Pasta with Chicken meatballs and Veggies
Aaalo (you can substitute it with chanay) Palak
Stiir-fry Quinoa with fish and veggies
Vegetarian Bean and Chard Soup
Lasanga
Daal (can also add spinach)

These are just some of the things I have made in the past. I don't enjoy eating leftovers, but it beats having to cook everyday or make short order meals.

I marinate chicken and leave it in the freezer in a baking pan. When I need a meal quickly, I just stick it in the oven and have tandoori chicken ready quickly.

Also chicken salad is very helpful to make quick sandwoches.

Also, rotisserie or baked chicken can be used for salads or wraps

I tend to cook everyday as my husband won't eat leftovers. our weekly menu tends to be stuff like roast chicken with new potatoes and veg, macaroni and cheese (not the healthiest but quick to do), chicken enchiladas with rice (super quick meal), chicken karahi etc. all. made from scratch as we don't really use ready made meals. it can b pretty tiring after a hard day at work but u have to eat!

donno about take to work but the following keep well for me

channa masala or chaana+chicken
all the daals
spinach
bhindi plain or with meat
eggplant - without aloo
chilli
haleem
meatloaf
marinated chicken/fish ... i make lots of 2 -4 serving packs and stick them in freezer. take out on day of use in morning. usually serve with steamed or roasted vegetables

vegi enchilada
soups

you might like instapot ... i love mine! its a pressure cooker, slow cooker and steamer in one. you can do lots of soups stews ... literally come home to hot fresh food. obviously with pressure cooker ...its fast fast fast ... i make daal (all kind) in pressure cooker in 15 min flat. there are tons of recipes online for both slow and pressure cooking.

I used to de-frost my meats in the fridge on my way to work (5am) especially chicken, because I need fresh chicken curry at least once a week.

Also my aunt gave me this tip to boil gosht (lamb/goat) with onion/gg paste and leave that in the fridge too (Just add sabzi - gobi/palak/daal) and that's dinner.

Would do the prep work ahead on sundays (like already preparing lunches for the whole week, making onion/tomato masala, garlic/ginger paste, wash+chopped dhaniya, make vege raita, chop green chilies etc) to cut down as much as work I could for those awful cold weeknights

I never bothered to make fresh rotis because I always got home around 8pm and that was the last thing I wanted to worry about, so settled on store bought naans/pita, or boiled rice

ive used it for making chilli, all kinds of daals, lemon garlic chicken, bbq chicken. chicken cacciatore (using frozen chicken breasts) … basically all kinds of stews/casserole. steamed vegetables, steamed fish, steamed rice. mattar pilau.
it has a saute function … so i can and do brown onion/garlic, thawed chicken etc and reduce liquid i the dish if i want to
havnt tried doing a desi curry yet … i bet its doable.
i have seen pics/recipes of ppl doing roasted chicken, babyback ribs, risotto etc …

instant pot - chicken curry

cooked chicken karahi style … no onion

-put cooker on saute function

  • heat 2 tsp oil, add 2 tspn tomato paste stir a min or two. add all your spices (chilli powder, salt, cumin, corriander, turmeric). add garlic and ginger (fresh). Added frozen skinless, boneless chicken, add frozen tomato. add 1/8 cup water.
    cook on slowcooker fcn 4 hrs.
    open lid, stir to breakup tomato. put bk on saute to thicken sauce to desired consistency. top with fresh coriander.
    im planning to serve with rice and left over daal.
