So my husband keeps saying that my pakoras are dry compared to others. I’m not sure what I’m doing wrong, I add enough water so that the batter is of a dropping consistency i.e it pours easily into the frying wok. I add a lot of onions. Anyone know what I could be doing wrong? Or what the key to soft moist pakoras is?

I add an egg, a little bit of baking powder and a few drops of vinegar on it. Don't overcook them.

I add baking soda not baking powder. Maybe I'm overcooking them stoppit. I'll see if that makes a difference. How does the vinegar help?

Yes over cooking can also make them hard n dry, add baking powder, it gives very good texture

Yes, baking powder is a key ingredient for soft, fluffy pakoray.

I add some yogurt and they turn out soft and Tasty.

I use baking soda, will there be much of a difference if I switch to baking powder?

Maybe you're just using too much besan - that always ends up in dry pakoras.

Don't add too much besan and let the mixture set for an hour or so, the longer the better they say.
Also cook them on a medium heat not on high. That way the inside will cook evenly inside and on the outside! Makes a huge difference.

baking made gives pakora fluffy texture instead of CRISPY (i am saying crispy not harder)... add egg, yogurt in besan.. and dont make the batter too thick.. it akes pakoras harder

I add baking soda, and also the batter should not be very hard. I never added any yogurt or egg but alhumdulillah they are fine, but can try for sure.

what i do is add all the powder masala's baking powder too mix the batter according to the consistency i like not too think not too runny and keep aside for atleast 30 mins then add the veggies immediately before frying. if u add the patatoes they leave water - result batter too watery and pakoras are dry.
try above i m sure your pakora's will be moist, soft and fluffy.
