seprete pan boil water add sugar ilachi and boil , when suji gives you good smell add bolied water and let it cook like regular suji halwa for 10 minute simmer and add badam AND Aenjoy

Let me post my recipe of Soji ka halwa.... Its some what crispier (because the sugar is caramalised first) than the recipe posted above

Servings: 2 persons

Soji: 4 tbsp
Sugar 6-8 tbsp
oil/ ghee: 1 tbsp (you can put even more)
Pistachio/ almonds/ silver apper: for garnishing:
Coti lachi
dash of yellow color: optional

Soak sojhi in almost double amount of water for 10-15 minutes...Heat ghee/oil in a pan... and put grated ilachi... then put sugar until the colro changes...Keep on stirring so that the sugar may not burnt out.... then immediately pour that soaked sojhi.... try to drain out exces water...and keep on stirring... if its hard to stir add few tbsp water... garnish with nuts.

Save yourself a whole bunch of time by using skim milk evaporated milk and cut out ghee and replace with 1 tsps of olive oil. Tastes just as good and you might live a few years longer.
