hmmm.mums turns out perfect every time and she had given the recipe. add more water i guess! use 2.5 glasses instead of 2.

FF, the halwa we used to have in gaon with poorian was very wet and rich tasting. I kept the halwa on dum, solved the other problem but I guess I am doing something wrong because the halwa is dry and khara khara.

Sorry for the late reply, just didn't check in since my last post.
FG, for the quantity of sooji given, I find that adding between one and a quarter to one and a half cup of water works out just fine. The halwa is neither too dry nor too runny.
You know, this idea of adding milk... How about if you try a mixture of water and milk? Say, one cup water, half a cup milk? Guess you'd have to be extra vigilant about stirring, right? I have never tried it but if you do, let me know how it works.
One more thing, I start at medium heat and cut down to medium low after a while.

Poori waala Halwa
3/4 cup olive oil or any other
1 cup sooji
2cups of water
1 1/4 cup sugar
A pinch of orange food color
6 pieces of grounded ilaaychee
1-Heat up the oil
2-Bring down the heat to medium
3-Add sooji and bhoonafy it for 4 to 5 minutes
4-Separately, boil two cups of water - add sugar and food coloring to it
5-Add this mixture to bhoonafied sooji at medium low heat
*6-Stir for a minute, add grounded ilaaychee *
7-Turn the heat off and cover it for 5 minutes
Maze-daar poori choley wala halwa tayyaar!

BTW, what about the pooris? I can't make roti/paratha/pooris to save my life. Anyone got any ideas?

The best option for pooris is the refrigerated flour tortillas in the dairy/cheese section of Walmart. I will get the exact brand name for you. Deep fry them in 200 deg C oil. They even puff up like halwaaee's pooris in Pakistan. The results are unbelievably good.

Milk in halwa sounds like custard. Don't want it!Ghee is too smelly...Don't want it!
Halwa without color is OK but for halwa poori, orange color is a must!
I don't like your friends but I do like you so I will not take offense to your otherwise very offensive edition of my recipe.

My mum always makes the regular sooji halwa and it is so hard and not yummy at all. Thankfully she has cut down to making it only once or twice a year.
I never could figure out how the halwa puri guys got it so mushy and soft. I guess the trick is to add the sugar to the boiling water like you said.

Food coloring is a no-no. I remember seeing pink and orange halwas at bari-imam ka mizaar in Islo. That dies look very oily FG, but as long as u enjoyed it its all good. Milk actually does give the halwa a very rich taste. My mum always adds milk if he wants the not too liquidy halwa.
