Suicide example is not the right analogy because of two reasons.

You’re not slitting the windpipe.
You’re slitting your own wrist so your mind is in sync with the consequences.

I heard from some of the master bbq chefs that slaughtering tenses up the animal, hence the meat is always tough. Stunning does not give animal brain enough time to process the info so meat is soft. That not only makes sense but clears the myth that slaughtering is more humane.

Slaughtering is more humane … Because it was done and sanctioned by the most humane person who will ever live (SAW) … It was the way the father chose to take the life of his son … Peace be upon them both … Pain is connected to the nerves … The windpipe cut or not is not damaging any extra nerves … A slit on the throat severs the least nerves … The animal can be put to ease at slaughter too. Whether meat is tender or not is not the criterion of humane slaughter.
