.. recipes anyone? most of us love hakka chinese im assuming… ive tried my own various kicks to a chow mein.. or just rice! but it never comes out that way…
the only tip i can put forward is cooking in sesame oil! the flavor comes out real good.

You'll never get the same taste if you're cooking at home, even the hakka chinese can't get the same taste as of the restaurant, so why even bother.

well for that matter why bother cooking at home at all! and since you CAN get that awesome taste in home-cooked meals if you try hard enough... im looking around for anyone who has any tips/ recipes to give out :)

hakka noodles;
Ingredients:
4oo gm Noodles.
60 gm Cabbage.
60 gm Carrots.
.
60 gm Shredded chicken.
60 gm Capsicums.
1/2 bunch Spring onions.
60 gm Bean sprouts.
5 gm Salt.
1 tsp Soya sauce.
2 gm Ajinomoto.
30 ml oil.
Method
1.Boil noodles till soft.
2.Shred all vegetables.
3.Shred chicken .
4.Heat oil in a wok and stir fry all vegetables.
5.Add salt, ajinomoto and soya sauce.
6.Add noodles, mix well and serve immediately

2 gm Ajinomoto a BIG NO. It is not good for you, please desis stop adding Ajinomoto to your chinese or any other food.

hmm well ive heard various stories on ajinomoto/ MSG... like it's supposedly made from snake skin n what not... so what's so bad about it really? chinese food doesn't come out chinese without the MSG ....

I think these day they are trying to use as little as possible.

I believe folks say that using sesame oil and peanut oil can also add a lot of authentic flavor. The way i make chow mein is follows:
Heat some oil. Add chopped green onions and chopped garlic and saute until soft. Add chicken breast cut into cubes and cook until they are no longer pink. Add veggies of your choice ( we like bell peppers, mushrooms, carrots etc). Add salt, black pepper and garlic. Cook until done per your liking.
In a seperate pan, boil chinese egg noodles and keep aside.
To make the sauce : THese are the basic quantities to be used. You can adjust to suit the amount of food you are making. In a pan, mix 2 tbsp soy sauce, 1 tbsp vinegar and 2 tbsp oyster sauce. Heat until boiling and then add to the chicken mixture. Mix well and then add to the noodles. I usually layer the cooked noodles and the chicken and sauce mix and alternate the layers so they can be mixed properly.
I find this recipe to be pretty easy to make and also very adjustable. Feel free to experiment with it.
