i finally know how to make the best gulab jamun at home !!
was so easy i never knew and always used that crappy pre-made mix, and they never came out just right.
My aunt showed me how to make the yummiest gulab jamun with pancake mix!! they were soooooooo good !! ![]()
Perhaps you could share the recipe for those who would like to try it out themselves?
sure heres the recipie:
First make the sheera:
In a large pot heat up 3 cups water and 2 cups sugar well mixed. Add 4 choti ilaaichi for nice khushboo! Keep heating until it reaches the type of consistency u want. I like to keep it flowing thin cuz it thickens a lot by itself later on. Stir occasionally while its cooking.
In a large bowl mix:
carnation milk powder, 1 cup
Bisquick all pupose mix, 1/2 cup
Ilaaichi powder, 1/4 tsp.
Add fresh cream little by little to thicken (this is the tricky part cuz u have to see for urself how thick its getting. It has to be thick enuf to make small soft balls).
Make sure the balls are smooth on all sides meaning no tiny cracks otherwise they wont fry properly. Best way to do it is to first press hard btw ur hands and then roll them into balls.
Heat up oil in a non stick pot, the oil should be well heated up but once its hot enuf lower the heat to minimum so the gulab jamun wont burn! Deep fry until golden brown. Dont use spoon to flip them over while theyr frying otherwise they might break. Instead u can move the pan slowly to make sure the balls get fried evenly. Another thing, dont use a deep frying wali karhaai, use a non stick pot and use oil just enuf to make sure the balls are 3/4 way in the oil. This will make it easy to swirl the pot around, the karhaai might not be deep enuf and could be unsafe to handle hot oil like that!!
once they r just the right color take them out and put immediately in the warm sheera.
Best to prepare the night before u have to serve them, but dont refrigerate just leave them out in the sheera and take them out of the sheera pool when serving ! :)
wats a bisquick mix?

Bisquick is usually used to make pancakes, but any kind of all purpose flour should work too, the only thing is then u have to add a certain amount of baking powder and im not sure how much.
With pancake mix , the baking powder etc... is in it already so u dont have to worry bout all that extra adding.
Bisquick is just a brand name, u could use any other pancake mix too, although i havent tried the other brands so cant guarantee....!

I should correct myself, actually the Bisquick i used it says on the box that its an all purpose mix for pancakes, biscuits, muffins etc....
u can try any pancake mix, it should work! but ive only used Bisquick all purpose.
better to use any brand all purpose mix.

We make 'em at our house all the time. The two tips always to keep in mind are:
1) Ideally, the rounded balls of dough should not have ANY traces of air in them.
2) The oil should be hot hot, otherwise they might i) not cook right from inside ii) puff up too much and break!
You use the same recipe AJ??? I tried it but I think my sugar solution was too patla and hot cos when I put the gulab jaamans in it they turned a little too soft and eventually broke apart :( Don't you add some sooji in it to give it a granular texture???
It's pretty much the same recipie ... we follow the one on the back of the box.
Also, there was a difference between the mix we got from Shan & some other brand (white box & a little bigger in size). The later gave us better results!!

im sorry, i shudve pointed out that you shouldnt put the fried gulab jamuns straight away in the HOT sheera, if u wait till it "cools" down a little (but should still be warm) then put the gulab jamuns in.
thats exactly how i did it and mine were just fine.
it takes a lot of practice to get this right! :(
plus, dont turn them around once u put them in the sheera, that could also be the cause of breaking them!
