1/4 cup(s) Extra Virgin Olive Oil, The darker the oil the better
3/4 cup(s) Plain Yogurt
1 1/2 teaspoon(s) Garlic Powder
1 1/2 teaspoon(s) Salt
1 teaspoon(s) Dried Oregano
1/4 teaspoon(s) Ground Black Pepper
1/4 teaspoon(s) Ground Cumin
1/4 teaspoon(s) Ground Coriander
1/8 teaspoon(s) Ground Chile Powder, You can add as much or little as you like.
2 tablespoon(s) White Vinegar
2 pound(s) Skinless, boneless chicken breast halves, Cut into 2 inch cubes
Directions

Whisk together the vinegar, olive oil, plain yogurt, garlic, salt, oregano, pepper, cumin, coriander, and chili powder in a large bowl; add the chicken and toss to coat.
Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours or overnight.
Preheat an outdoor grill for medium-high heat and lightly oil grate.
Thread the chicken onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side.

I also thread chunks of red onion & bell pepper/capsicum along with cherry tomatoes in between the chicken pieces. I make it in the oven on a broiler pan or use an indoor grill. Add a green salad and some hummus and whole wheat pita and you’ve got a delicious and light dinner or lunch!

I usually make this with fish, but you can do it with boneless chicken:

Preheat oven to 350 F. Grease a baking tray.
Cut each chicken breast in half lengthwise to make a thin chicken cutlet. Season with salt and pepper.
Slice an onion and spread evenly in the baking tray.
Arrange chicken filets over the onions.
Finely chop some parsley and mix it with minced garlic, and a little salt and pepper. Spread mixture evenly over each filet.
Thinly slice a lemon and arrange the slices over the parsley mixture.
Coarsely chop some olives and place about 1 TBS over each filet on top of the lemon layer.
Sprinkle some smoked paprika over the entire arrangement. Cover in foil and bake.

I marinate with salt, pepper, and sometimes chill powder and then grill it. It is delicious with sautéed onions and bell peppers.
Or marinate lightly with Sriracha sauce
Sometimes I do tandoori chicken.
Othertimes I do lemon marinate with salt and pepper.

I am getting sooo bored of eating chicken breast too and I just started two week ago :frowning:
You could try a chargha if you cook for more than one and eat the white meat part yourself.
You could marinate the chicken in orange and bake it (I haven’t tried this yet but I heard its good).
Plus if you make hummus, it will give a different flavor as a dressing.
Try chicken salad too but instead of mayo, use greek yogurt for the texture.
