Gravy Chicken

Hi everyone, I want to know how to make chicken more softer in gravy chicken dish.. I want it to be soft as cake or cream.. There’s a hotel where I oftenly dine.. they serve chicken gravy which is always so soft that drives me crazy.. but whenever its cooked at home, chicken remain hard or whatever its called etc.. so kindly tell me the recipe..

lol, sure Uncle, go ahead.. my dad cook Aloo-gosht shorbay wala yesterday.. alooz were soft, lol, but chicken wasnt :bummer:

So the trick is to fry the chicken in browned onions at high heat, if there is a lot of chicken brown it in batches as adding too much chicken will reduce the temperature of the panda, browning at high heat creates a seal and moisture stays in the meat. If during frying chicken releases water then it is not going to be soft.After browning you cook at slow heat for a long time which will make it melt in the mouth soft. I like to use yoghurt in my gravy. The tendons and fibres breakdown in long slow heat.

There are so many ways to cook chicken, karahi, balti, korma, badami, coconut, green curry, cumin chicken, chicken jalfrezi, cacciatore..etc. If one gives me the preference then I can give the recipe. My kashmiran likes with loads of tomatoes, onions, ginger garlic. I personally prefer yogurt base. Butter chicken is like halwa soft. I usually cook that with yoghurt but for the club get together I splurged and used cream. I recently started cooking with greek yogurt as it has a lot of protein

Bobby uncle, can you find me a husband who loves to cook too? No matter how much I tell myself, cooking is fun, I never liked it.

Cooking is becoming a guy thing here, amongst a lot of my young Indian clients guys are the cooks in the household, I am not sure if it will become a Pakistani thing though. Most of my nephews don't even pick up their plate. My wifes nephew is good though, he killed and cooked an Iguana. He is my boy, I mentored him.

he was a high powered executive and they came to visit and we went hiking, atvs in mountains and white water rafting, he quit his job right after and went around the world sleeping in cheap places, train stations, roads etc, I think they sell live Iguanas in the market there in Nicaragua. This one looks like its quite meaty.

Normally he is a suite and tie guy. I am happy he experienced life.

He looks a bit horrified haha but interesting, I just googled it and had no idea that green iguanas are not just central American but also a Caribbean delicacy. You learn something new every day.

I dont think I would be trying that delicacy anytime soon, he has great ability to approach strangers and befriend them. Some local family made him their guests. He has picked up recipes from around the world. Normally he looks like an executive, but backpacking around the world can make one look like he did.
