Can someone post some easy vegetarian recipes… I mean recipes with absolutely no meat involved… could be anything from soups to salads, to daals or pastas… and good tasting stuff…I still feel iffy about touching chicken and stuff unless I absolutely must! ![]()

snack sandwich: brown bread slices with
feta cheese grilled tomatoes, top with tuna
lunch: butter-smoked salt and black pepper potatoes' sprigs in yogurt with rice and soup of green beans and carrots and coriander in vegetable stock with black pepper, honey black tea
tangerine and pineapple medley on a pound cake with ship cream
dinner: any combination of salad vegetables - beet root, baby spinach, salad leafs, spring onions and bell peppers with olive oil and mushrooms
salad dressing of your choice
boiled eggs or omelets
boiled or brown rice
end with skim milk ice cream or mithai

Greek Pasta with Tomatoes and White Beans

INGREDIENTS
- 2 (14.5 ounce) cans Italian-style diced tomatoes
- 1 (19 ounce) can cannellini beans, drained and rinsed
- 10 ounces fresh spinach, washed and chopped
- 8 ounces penne pasta
- 1/2 cup crumbled feta cheese
DIRECTIONS
- Cook the pasta in a large pot of boiling salted water until al dente.
- Meanwhile, combine tomatoes and beans in a large non-stick skillet. Bring to a boil over medium high heat. Reduce heat, and simmer 10 minutes.
- Add spinach to the sauce; cook for 2 minutes or until spinach wilts, stirring constantly.
*]Serve sauce over pasta, and sprinkle with feta.

**Avocado Tacos **
INGREDIENTS
- 3 avocados - peeled, pitted, and mashed
- 1/4 cup onions, diced
- 1/4 teaspoon garlic salt
- 12 (6 inch) corn tortillas
- 1 bunch fresh cilantro leaves, finely chopped
- jalapeno pepper sauce, to taste
DIRECTIONS
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, mix avocados, onions, and garlic salt.
- Arrange corn tortillas in a single layer on a large baking sheet, and place in the preheated oven 2 to 5 minutes, until heated through.
*]Spread tortillas with the avocado mixture. Garnish with cilantro and sprinkle with jalapeno pepper sauce.

**Pesto Pizza **
INGREDIENTS
- 1 (12 inch) pre-baked pizza crust
- 1/2 cup pesto
- 1 ripe tomato, chopped
- 1/2 cup green bell pepper, chopped
- 1 (2 ounce) can chopped black olives, drained
- 1/2 small red onion, chopped
- 1 cup crumbled feta cheese
DIRECTIONS
- Preheat oven to 450 degrees F (230 degrees C).
- Spread pesto on pizza crust. Top with tomatoes, bell peppers, olives, red onions, artichoke hearts and feta cheese.
*]Bake for 8 to 10 minutes, or until cheese is melted and browned.

Black Bean Burritos
can of whole black bean heated i usually use ones that are already spiced up and i don't drain them they can get dry like that
pico de gallo salsa
lettuce
sour cream
taco sauce
mexican cheese mix
and guacamole
tortillas
warm tortillas, assemble together, and enjoy
another idea is veggie roasted pizza with artichokes and herbs dry or fresh, u can use a pre made crust.
and try out broccoli and cheddar soup i don't have a recipe but its just so yummy!

and another one i just remembered are vegetarian fajitas, they use setain the wheat version of meat, here is a recipe
INGREDIENTS
- 3 tablespoons olive oil
- 1 small onion, chopped
- 5 green onions, chopped
- 2 cloves garlic, minced
- 2 habanero peppers, seeded and minced
- 1 red bell pepper, chopped
- 1 1/2 (8 ounce) packages seitan
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (16 ounce) can diced tomatoes
- 3 cups cooked white rice
- 3 tablespoons chopped fresh cilantro
- 1 (18 ounce) bottle barbecue sauce
- 10 (10 inch) flour tortillas
DIRECTIONS
- In a large saucepan (wok pans also work well) heat oil over medium-high and saute yellow onion, green onions, garlic, habanero, and bell pepper until onions become translucent. Add seitan and saute another 5 minutes. Add black beans and tomatoes. Heat through.
- In a medium size mixing bowl combine heated mixture with cooked rice, cilantro, and 1 cup barbecue sauce.
- Lay tortillas on flat surface. Spoon about 3/4 cup of filling onto each tortilla's center. Wrap tortilla so that mixture is captured on the inside . *]In a casserole dish pour barbecue sauce to coat the dish's bottom. Place burritos in dish and pour more barbecue sauce on top of them. Bake in a preheated 350 degrees F (175 degrees C) oven for 35 minutes.

Here it is:
250 grams of mong with chilka
100 grams of fresh green methi
soak the daal in water for about an hour
drain out the saoked water and then add water (3 times of daal)
add leaves of mehi, add 5 rocket chillies (pierced), salt, garam masala
bring to boil, then simmer, when daal is tender
then do tarka of zeera, whole red chillies and garlic.
