Could anybody post a really good recipe or a recipe link they have tried for pakoras. Sometimes my pakoras turn out good and other times they are raw or hard on the inside . Please help. Do you add baking soda to mixture?

I just slice onions, potatoes and spinach (slice the potatoes very thinly). Add salt, crushed red pepper flakes, cumin seeds, a bit of coriander seeds, red chilli powder and then besan. Add driblets of water until the mixture is pasty - not too runny and not too dry. I've never added baking soda and almost everyone that's tasted my pakoras has said they're insanely delish. Sometimes I might add anardana (pomegranate seeds) and that also makes them super-tasty.
If your pakoras are coming out raw or hard on the inside - you're using too much besan and making your pakoras a ridiculously huge size lol. The besan should hold everything together. Make sure your oil is at the proper temperature before dropping in your pakoras, and also make sure they're all about the same size. I drop them in the oil by hand but you could use a spoon or an ice-cream scoop to help you.

pakoras coming too hard is also i sign of very thick besan paste ....leave the mixture for 15 to 20mins before frying, also add a teaspoon of oil u r using to fry pakoras, my mother always did this and now i do it, i think it just makes them more crispier. Also use lots of spinach.....what i usally do is i get a fresh bunch chop it up nicely and freeze it in a ziplock bag, add it to the besan mixture without defrosting, so you don't have to shop for spinach every time you want to make pakoras.

^ Yeah, I forgot to add that...if you feel like you added too much besan, if you let it sit for a while before frying...it thins out/gets watery over time.

Twinklestar I always add Baking soda to besan as it gives pakoras good shape and as others said batter should not be hard. ANd yes leave mixture for 10 to 15 mins before frying. I also make chicken pakoras they are my favourite, just finished them now. Brinjal pakoras are other favourite of mine. Green onion pakoras also tastes yummy. If anyone need recipe i would be more than delighted to give.

S_punk pakoras were a hit! I just added a little of ajwain. Are u suppose to cut the potatoes into thin small slices?

Oh, awesome! And yes, cutting them on the thinner side helps for even cooking. You don't have to worry about raw potatoes if they're thinly sliced =) And good thinking with the pinch of ajwain - I do that sometimes as well.
