Hey I mostly cook Aloo Gobi, since family doesnt like meat in gobi ..
Following is a very simple recipe that always gives beautiful results :
Prepare basic masala by frying 2 chopped onions , until they are mushy and caramalized. Then add in one tsp each of garlic and ginger paste .. finally add in two chopped tomatoes .. cook this all until tomatoes are fully mixed into the masala .. now add in salt to taste , one and a half tsp red chilli powder, half tsp haldi , a quarter tsp ajwain .. and after a minute of stiring the spices , add in the gobi florets , mix lightly, cover the pot and let this cook in its own steam.
dont forget to stir it often, even if its sticking the bottom of the pan, try not to use any water ... water kills the taste of a vegetable .. just lower the heat and that should sort out your problem.. Keep stiring until the gobi is done .. I personally like mashed gobi rather then khari khari .. so I cook it until the florets are about 75% mashed .. if you like it less cooked , then ensure you add the cubed potatoes when the gobi is almost 25% done ..
along with the potatoes , add in a handful of fresh corriander, two to three chopped fresh green chillies, freshly grinded corriander and zeera seeds ( half tsp of each ) ... cover the pot and let the potatoes cook in steam ..thats it , gobi is ready as soon as the potatos are done .. enjoy
