I have looking for a great matar pullao recipe. I’ve always loved the way my punjabi neighbor made it. It was always the perfect accompaniment to any Salan she made. I know she put zeera.

ohh its a simple one .. but I make it with a twist
sharing that with you today ..
you know when you use fresh peas out of their pods .. keep the pods after taking the peas out.. wash them thoroughly and crush them lightly with your hand .. then add about three cups water and one tsp salt and let it boil on high heat for 20 minutes .. when done, throw away the pods and keep the water.
In a pot, fry one to two onions thinly sliced .. when they turn brown, throw in quarter cup water and immediately cover the pot so that the onions release their color ..
chuck in about 2 cups peas, fry them until almost cooked , they take about three to five minutes .. then add in zeera seeds about half tsp, salt to taste, green chillies about 2-3 , whole spices ( corriander seeds, black pepper pods, cinnamon stick, two black cardamom, a few cloves ) one bay leaf ..
for two cups rice, you usually need 3 and a half cup water .. use the pod wala water that you saved and if it falls short add in the usual water. Bring it to a boil, then add rice in .. cook on high heat, covered .. when the rice are nearly done, put them on dum , sprinkle some fresh zeera seeds
after dum for 10 minutes , pulao is ready …

try adding a dash of white vinegar right before dum.

Thanks cb. Is there a reason for using the pod water? I always use frozen peas . I don’t have access to fresh peas.

Its alright not to use the pod water .. specially when you are using frozen peas ..
the pod has a unique matar taste .. normally the pods are cleaned and used in a liquidized form in pea soups as well .. they just enhance that pea taste .. that is the only reason I boil them in water and crush them slightly so they will release that flavour and I have felt pulao tastes really good with that enhanced taste ..
We dont often get the fresh ones either , so its mostly the frozen ones we use .. so when ever I get the fresh ones, i try to take full advantage of the pods ![]()
