good desi foods

my dad has chelostrol on top of diabetes that he alread had, I wasnt surprised though considering our desi food but I want him to still enjoy the food he eats instead of putting him on a strict diet..so are there any good healthy desi recipies? n I mean like real desi stuff

P.S. my dad is EXTREMELY picky, he might like one out of the ten things i make so I need lots of ideas..

all sabzis and daalein cooked in a good oil like olive oil or canola oil...is sarson ka teyl ok? ask doc

in meetha use sugar substitute and skimmed milk

and in his chai put honey not sugar

Olive oil is not okay nor is strict diet.

Use wook (sp?) for all your cooking, you wont have to use that much oil. I'll post recipes later.

He can pretty much eat anything in smaller portions, with two hours interval. Is he meat lover like most desis or are veggies okay?

Tikhi, my mother also has the same issues and we use minimal amount of (olive)oil possible. When we eat fry stuff at home, she bakes her portions. If she does have to eat fried food, she takes small portions. You will be surprised like I was, desi food doesnt have to be drenched in oil to taste good. That's interesting, where did you hear or read about that ?

While everything should always be in moderation, My dad's doctor has always told him tht olive oil has antioxidant characteristics that help inhibit the process that produces the bad-type cholesterol, without affecting the good cholesterol.

What's wrong with olive oil?

Why? I don't recall, some specialist told my father to stop using olive oil, other docs had been suggesting it for years. Doc recommended cholesterol free plant oil instead.

^^ Found this on the net but wanted to add something. Olive oil is still a fat so too much of it is as bad as all the other oils. I've also heard that you should't use it for cooking, but don't know why..

^ because it can't absorb the heat of the fire like othe ordinary oil, but still its much better for salads, dressings, topping as regular veg. oil.
