Rotis are goal because you start with a rounded ball of dough (peRaa) and when you roll it out with the bailan, or by throwing up in the air like pizza and chapati makers do, it ends up becoming round.
Chokor paratha starts with square shadow folded piece of dough, so it flattens out as square shape.
Btw my mother in law makes triangular shape paratha. My guess is that she takes the square shape and fold one corner over the diagonally opposite corner.

I ate these quite a times! The baati (baked aatey ke goley) are eaten with toor daal (also known as Arhar daal) in MP, Rajasthan, and Gujraat. They are eaten with aloo ka choka or baingan ka choka in Bihar. MP and Rajasthan waley log literally dip these baatis in desi ghee before eating. And yes, they are absolutely yumm.
In Rajasthan, these baatis are crushed, sugar, ghee, and dry fruits are added and this is called Churma.
These being available in Varanasi/Banaras - I dont know about that fact…never seen them there.

same here. besides that tawwa doesn't play any role in shaping roti. If that was the case, tandoor ki roti kabhi gol nahin hoti

nope, it does! there is a dome-like tawaa [used in road-side dhaabaas] to make bigger and thinner chapaatis...the dough is very elastic...the flattened [with a thin centre and thicker edges] dough is thrown on top of the hot hot tawaa...the round shape takes place quickly due to gravity...gravity pulls it from all sides equally and as a result a perfectly round and thin chapaati is made.
