You can even make chola chaat with all these chutneys and stuff, crushed golgappas over it add a crunch to it. A snack bar like this would be a bit of a hassle but you can prepare these in advance. It will surely be a hit with the guests. Just keep the golgappas separate so it doesn't become soggy and leave the chopped onions/herbs separate as well so it doesn't make the chickpeas watery.
Sheer genius of an appetizer and prolly my favorite food in Desi cuisine. My favorite part is the meethi red chutney. Don't know what it's made out of but without it, it's incomplete.

There were no pooriyan in Perth, relocated to Sydney last year you can find it at almost each corner now, specially when we are living in area having abundant desi ppl. Im still hunting for chanany bhatorey however
