My hubby's bday is next week so I just picked up from Coach a calf leather passport holder (since he travels internationally for work so much) and I had his initials blind stamped on the inside. For Valentines Day or Fathers Day I'll get him the matching men's shaving/toiletry pouch.
A couple of years ago I booked him a men's hot towel old fashioned straight blade shave package at The Art of Shaving, that he really liked lol...what else..mine likes anything techy or aviation related since hes a pilot as well (hobby and side gig).
If he's into fitness, how about a fitbit? Or maybe a package session with a trainer? New gym bag?

When it was my dad's birthday, I gave him a Hugo Boss tie, an Emporio Armani watch and a Burberry perfume. Along with some Patchi chocolate. You can make a gift hamper of sorts, putting in things he loves and gifting him the package. It has more impact than individual item(s).
My husband is into cars, and one of the gifts he enjoyed most was a subscription to the Top Gear magazine. If there's a popular magazine in the motorcycle world that you can subscribe to for him, it's like getting a gift every month!

1. Fitness gear - sports shoes, fitbit, apple watch, gym membership, personal trainer sessions
2. Jacket/Coat - maybe a formal one he can wear out with you on special occasions?
3. Kindle or books
4. "Experience" gifts - Tickets for bungee jumping, skydiving if he's adventurous or a destination he's always wanted to check out. A family trip to an amusement park if you like the thrill too :)

I just bought him a really nice formal coat before we left Chicago.
