If you do go for flowers, maybe get her a flower pot or a plant that continues to grow/live instead of just a bouquet of flowers...whatever she likes.
Dinner sounds like a good idea...or how about plan a day with her. Depending on her interests, plan to take her out and spend time together, and have dinner while you are out, I am sure she will enjoy.
