A very simple garam masala is just the mix of three spices:
cloves, black pepper and black cardemom! In every day curries.
for a qorma you need two types of garam masala: the basic one and aroma one:
which inlcude nutmeg, mace, cumin and green cardemom ground tegether. which you can put together with star anee seeds, tez paat,
a main masala to cook tasty vegetable is a combination of fenugreek, saunf, kalonji, mustard seeds
in nihari you have to add peepli as well.
