Re: ghajjar ka halwa
There is not much shortcut to gajar ka halwa
This is how I make.
Carrot: 1kg
Milk: 2kg
Sugar: 3/4 cup
Ghee: As required
green cardamons; 7-9
Khoya (optional) or powder milk: 1/2 cup
almonds and pistachios to garnish
Peel carrots and shred them and let them cook in the milk, when you see that around 1/4th milk is left add sugar and again wait till all water evaporates. Then heat ghee and add cardamons to it till smell good and then fry prepared carrot mixture for 15- 20 mins when you see colour changing. Then add khoya or powder milk and add almonds and pistachios and leave on dum for 15 mins. All done

Re: ghajjar ka halwa
I hate gajar ka halwa, because every time my wife is going to make it, I see a lot of carrots lying around, abd think she is going to make gajar ki kheer, which I am fond of, but instead she is going to make gajars mixed with a lot of sugar and ghee, also called gajar ka halwa.
Excuse my rant, but it happened today as well :(
