Gelatin in mousse?

Hi, I’ve come across a chocolate mousse recipe in my recipe book, requiring half a leaf of gelatin. I know there is a vegetarian gelatin available, but is it really required? Can I make the mousse with just the chocolate, eggs, sugar and double cream? Please advise :slight_smile:

If you are a halal-eater, you can get halal gelatin flavored and unflavored. I've read that agar can be substituted for gelatin. You can also try guar gum, carrageen, or arrowroot

It wont set like a mousse if you skip gelatin.

Thanks guys, I skipped the gelatin yesterday, I couldnt find the vege one in the shop. I'm not sure if it made much difference, the mouse did set, but then again I've never made it before so couldn't make a qualified comment.

And Toyger.. yes I'm a halal-eater, hence why I didn't want to use it. I didn't know there was a halal version ! I'm in the UK? Im not sure if the shops will have it here...the other suggestions, great! I will be sure to try them out next time if I dont get hold of halal gelatin :)

sahds , halal gelatin will be hard to find here in the UK. I have tried and not found it. Unless someone else can guide us :hmmm:

did the eggy taste remain?

yeah I agree, I live in a halal shop explosion, but never seen the stuff lol

As for the eggy taste, I dont think it did! I tried hard to 'taste' it, but all I could taste was the white chocolate goodness.. yummy!

Though, while my family were eating, I was praying I don't give them salmonella. So far so good :)

Can you share the recipe with us? It sounds good!

I'm in the US and we can find halal gelatin in most desi stores. You can also try to have someone send you some from India or Pakistan because it's very common there.

Hehe, I found halal gelatin, a little too late yesterday. At the halal supermarket… although.. err it was cherry flavoured :confused:

And Toyger, here it is. I posted it in Chicken Biryani’s thread, so just copied and pasted :slight_smile:

Here’s the recipe, taken from Rachel Allen’s Food for Living Cookbook (excellent stuff)…

50g / 2oz white chocolate (chopped)
75ml double cream
half a leaf of gelatine (but I omitted this)
1 large egg white
25g/ 1oz caster sugar

1.Melt the chocolate in a bowl sitting over a saucepan of simmering water (bain marie). Set aside, leaving the chocolate to cool slightly. Whip the cream in a separate bowl until almost stiff and place in the fridge.

  1. Place gelatine in small bowl of cold water for 3-4 mins until it has softened, Drain off water and then add 2 tbsp boiling water and stir to dissolve the gelatine.

  2. Place the egg white in a medium sized bowl with half the sugar, whisk until firm and then add remaining sugar and continue whisking until mixture is stiff.

  3. Pour dissolved gelatine into melted chocolate and stir to mix, then fold in whisked egg white mixture and, lastly, fold in the cool whipped cream. Pour into glasses or bowls (glass :slight_smile: ), cover, place in fridge for a couple of hours till set rushes to fridge, as she forgot to cover them!

This serves 2 people. I doubled the ingredients and managed to fill three individual trifle/ice cream bowls.
