I have made chicken ka salen without garlic, because by the time I started cooking I realized, I didn’t have any. So I didn’t tell my parents, and they couldn’t tell the difference. I’m just sneaky like that ![]()
I guess because of all the masala’s?

The philosophy behind using garlic is to overpower the smell of meat (it is called heek in Urdu) and give it garlicky flavor instead. This can be achieved by many other masalas we use.
Although there are some meat which will not lose their odor/heek/flavor no matter what you do , like fish , lamb , old goat or old cow.

YES...my bro's son-in-law is allergic to garlic, onions etc so my Bhabhi makes everything for him without those ingredients and it does taste almost same. today, he is coming and Bhabhi is making all kinds of dishes without those basic ingredients :)

I think it can be done. I'm not sure, but I think there are a few dishes that my mom makes without garlic. I personally don't like that strong garlic taste lingering in my mouth. And I see some chefs on the Food Network Channel that are garlic crazy....like Emeril....and it puts me off.

i have made a few salans without garlic.. simply because i forgot to add it :hinna: turns out fine but daal with out adrak and lassan
my hubby can always tell if i forgot it to add it in the daal.. i wonder how ![]()

In my opinion, there is no such thing as too much garlic. However, sometimes there can perhaps be not enough of the other ingredients...;)
With sufficient garlic and butter, one can eat just about anything!

I almost always make desi food without garlic or very very less garlic. You never know the difference.
My Taya Abu literally hates garlic. My Tai jee makes food without garlic & you can never tell the difference.
