garam masala

I need to know how to make garam masala, what should I put and how much…would appreciate your help

I usually put:

1 tbs zeera
2 tbs coriander seeds
3 dry red mirchain
2 cinnamon sticks
1 big black elaichi
1/2 tsp cloves
1/2 tsp peppercorns

Dry roast them on a frying pan until you smell the spices. Remove, let it cool, grind in coffee grinder.

Excellent recipe by Niksik .... and just to add , when you include black ilaichi and cinammon, it gives the masala a strong taste .. I like it light , reduce the amount by half ( cinamon and Black ilaichi ) and increase the corriander and zera seeds by half tsp each ...

why not use the packet ones! theses days we get so many.. Are they the same as we make at home?

home made masala's are fresh and have a very aromatic taste ... the packet wala masala's are just not as good .. plus you cant be sure of whats been grinded into it ...

yes packet masalas have baby roaches and kittens grounded up. Stay away from packet masalas. :)

thanks all but now, what about other spices like maze(javatri), star anise, nutmeg....these dont go in garam masala? if not then what are they used for?

the spices you mentioned above ^^^ are to enhance the flavor and fragrance of special dishes, usually biryanis and qormas. Putting them in general garam masala and using it on a simple sabzee will take away from the flavor of the sabzee for example.

I only use black colour stuff - long, kali mirch, dar chini and bari illachi.

For some dishes additionally I use mix powder of nutmeg, mace, cardamom and cumin seeds - the aroma masala.

When i was a kid, I used to think Garam Masala means masala that is garam :bummer:
