Can somebody give me Masala Recipes. A friend of mine told me the basic garam masala has Clove, Cinnamon and cardamom. And she told me they add nutmeg, Mace, fennel etc depending on the dish.
Can you please give Masala recipe for Chicken and some Masala which can be used in vegetarian dishes..Please…
Well we usually use cumin seeds, cloves, cardamom, black pepper, cinnamon, dry coriander; nutmeg and mace are nice additions, but fennel has a typical smell that might not be liked in all the dishes...its upto you.
Katie , add 2 tbs corriander seeds, one tbs cumin seeds, half tbs peppercorns, 3/4th teaspoon dry ginger powder, one or two cardamom pods, less then half tsp cloves, a tiny piece of cinammon and just one bay leaf. roast them all together on very light heat . then cool them... and crush them into fine powder.
Normally for day to day cooking and if you are in a hurry, just powder up equal amounts of cumin, corriander, peppercorn and cloves. and you will be fine.
Can the above mentioned masala be used in Biryani or pilaf? What is the difference between Pilaf and Biryani? Will it be good for both vegetarian and Meat dishes?
