I make similar halwa, only differences are:
1) I always boil carrots in milk, they stay nice and khari kahri, for each kilo of carrots I use 1 liter milk, let it simmer until milk drys, you are supposed to use heavy base pan to avoid corrts from burning.
2) when it is time to add ghee, I fry nuts in ghee/oil and add that oil/ghee and nuts, that way nuts have more nutty falvour and are nice and firm.
