i made this dish last week under the giudance of a very sweet and very helpful and very patient person from Gupshup…
hmm so sab se pehle saare vegetables and meat and stuff ko chop kar le…as you can see in the below pic…
Carrots
Lamb
ginger
garlic
green chillies
onions
tomatoes

bartan mein oil daalein and then add the bayleaves, cloves, ilaichi, black pepper and jeera…
then add ginger, garlic and onions…fry karein thodi der…bore ho jaye to add meat and then the dry masala…like the corriander powder, turmeric, red chilli and salt…bhoone for some time…once you see that oil is seperate, add 2-3 cups of water…on high flame, keep stirring…jab paani kam ho jaye ekdum to check if meat is done…agar nahi to add some more water and keep stirring

again when the water is all gone, check for the tenderness of the meat…agar almost done hai to add the tomatoes and bhoone again…ab agar bore ho gaye ho to add the carrots and keep stirring…do it for another 15 mins or so and there you are… (yeah the chamcha becomes too hot you can see my red fingers)

ready to eat gajar-gosht…garnish with green chillies and coriander smokin tasted wonderful with parathas
