ok this is what I used to do in Pakistan!!

1/2 kg carrots (Peel and grate them... such a task)
2 litre Milk
1 1/2 cup sugar (I like it really meetha, you can use 1 cup)
4-5 cardamoms
2 tbsp desi ghee(my mil had sent us that so I had to use it but you can substitue it with 1/2 cup oil of course)
handful of soaked almonds(so it's easy to peel their skin), pistachios, and walnuts OPTIONAL for garnishing

In a big pot, add grated carrots, cardamoms, and milk..let it cook on medium heat.. Stir in once a while but let it cook till all the milk evaporates.. it will take about 2 hours
Once the milk evaporates, add in sugar which will release some liquid so you need to evaporate that too..once it starts looking dry, add in oil and bhonofy it.. bhonofy it till the color changes and you can see the oil on the sides of the pan.. the color becomes shiny reddish.. you know the halwa color.. it takes a few mins only.. later granish it with the almonds, pistachio, and walnuts if you like (personally I dun like nuts in my halwa) it always turned out yummilicious!!!
