ok this is what I used to do in Pakistan!!
1/2 kg carrots (Peel and grate them... such a task)
2 litre Milk
1 1/2 cup sugar (I like it really meetha, you can use 1 cup)
4-5 cardamoms
2 tbsp desi ghee(my mil had sent us that so I had to use it but you can substitue it with 1/2 cup oil of course)
handful of soaked almonds(so it's easy to peel their skin), pistachios, and walnuts OPTIONAL for garnishing
In a big pot, add grated carrots, cardamoms, and milk..let it cook on medium heat.. Stir in once a while but let it cook till all the milk evaporates.. it will take about 2 hours
Once the milk evaporates, add in sugar which will release some liquid so you need to evaporate that too..once it starts looking dry, add in oil and bhonofy it.. bhonofy it till the color changes and you can see the oil on the sides of the pan.. the color becomes shiny reddish.. you know the halwa color.. it takes a few mins only.. later granish it with the almonds, pistachio, and walnuts if you like (personally I dun like nuts in my halwa) it always turned out yummilicious!!!

Well i dont use milk,,,i only add sugar and cardamoms in carrots first and when it become dry and all the water evaporates,,carrots will be soft aur colour bohat acha aaye ga reddish sa then i add ghee to bhoonify it,,after that i add 1 cane of condensed milk and stir it till it dry then i add khoya and stir for a while,,,and then almonds and pistachio for garnishing.
It takes less time and is very delicious.

GTG...i make gajar ka halwa just like the way u do...:)
I find it really easy to make as compared to other pakistani deserts which require constant stirring and stirring and stirring....

pheeka kaisay??? i worte that first i add sugar(cheeni) in carrots and cook.is say aik tou sugar jab melt hoti hai tou carrots usi mein soft ho jati hain aur doosray un ka colour bhi red rehta hai jab k milk mein pakanay say colour bhi thora white ho jata hai.baad mein condensed milk daltee hoon.ye sweet hi hota hai jitna sweet aap kerna chahain :-)..
