according to Charaagh Hasan Hasrat, Gulabi urdu is more of colloquial in nature than being ethnic. Urdu with Mix of punjabi can never be a gulaabi urdu .. Trust me :)

it is not hindi
it is not sanskirat
it is not arabic
it is not persian
it is not sindhi
it is not turkish
but it could be evolved from all these and many more but to say that it was evolved from one of those, I am using that language in speaking urdu is an unjust statement

Main ju samjhi hon woh yeh hy ky Urdu ko “Lashkari” zuban kaha jata hy.Kion ky Islamic saltant ki Momin ky jahan ki trha koi hudood nahi thin kisi zmany main.(Ab abadi ki koi hudood nahi hain MashaAllah{khyr yeh jumlaymutariza tha}) So Urdu zuban mukhtalif zubanon ky milap:jano: sy wujod main ai. Ab agar Punjabi lehjy main Urdu bolin tu mera bhi khiyal hy Gulabi Urdu kehlay gi. Kion ky jahan sari zubanon ky lafz Urdu main a sakty hain tu Punjabi ky kion nahi.

iss liye kaY punjabi was not the language that affected Urdu as much as Arabic, Persian and Sanskirat did... Simple :-)
