Guys , I need some help, I am trying to make Chicken zinger for the first time … once I dip the pieces in the batter and chuck them in the oil .. should the oil be medium hot or really hot? how long would it take for the medium size chicken pieces with bones , to get cooked? and if I use boneless chicken small two inch pieces , how long would it take for it to get cooked?
Should i cook it entirely on low flame ? medium flame? please let me know .. and if there are any tried tested recipes , please share

Ok this is how I make burgers I use chicken breast pieces apply cut on them n marinate it wth chilli sauce vinegar salt black pepper n ginger garlic paste for almost 1 hour
For batter mix corn flour white flour baking powder salt black pepper chili sauce paprika powder n lil bit milk to make it consistent
Thn make dry mixture by separately mixing white flour very little baking powder n salt
First dip breast pieces in milk better than in dry mixture coat it thickly to acquire tht KFC style be careful wth baking powder if u add a lot it will get sour n salt also bc it's present in every portion
Oil should be hot but not like fumes coming out of it bc thn coating will burn n inside will not b cooked cook on le or medium flame :)
Did I tell you I can make zinger chicken? or at least try and its pretty good!
I use 1 cup plain flour,1 cup rice flour and 1 tbsp baking powder for coating!
I alternate the dry coating with beaten egg.. at least three or four times.. its like you dip in an egg, then coat with dry ingredients, dip in egg again, dry coating again and repeat one more time!
I was told that the key to the crispy piece is fry with the cover over karahi! I have a glass cover for karahi so I cover it on medium flame and let it cook for 10 mins, turn sides and le it cook for another 10 mins!!
hey thanks so much GTG .. I did try today and they came out good , but the chicken didnt get very soft from the inside … so tomorrow when i do the rest of the pieces I will try to cover the wok and see if that gives me better results …
Yes definitely cover the wok on medium flame otherwise chicken does not cook from inside. That’s the best way to do it. Otherwise if you are using pieces other than breast the you can boil them first in a little bit of water. All the chefs have slightly different versions on how to make zinger burger. I have made it by coatin. With cornflour and atta, by adding egg, bread crumbs, and mostly recently I tried it with rice flour. if you are doin. Chicken breast then you can pan fry in medium fly with fry pan covered. Fry on both sides.
