frozen food and nutritional value

Does freezing food compromise it’s nutritional value? I have always wondered about this?

i believe so ... coz any water soluble nutritional elements will get lost along the way .. that is why things like onions and few other vegies fare horribly when you try to freeze them ...

My elders used to say that instead of letting food muck about in the fridge for ages , just freeze it coz then it might not lose as many nutritional elements as it would if it was left for many days or weeks in the fridge ...

Also a very important thing, some of the aunties I know dont like defrosting food in the microwaves .. I asked them why and they said how you defrost the food can impact its nutritional value .. hence the best method is to let it take its time rather then hurrying the process ...

how about freezing tomotoes? ginger garlic paste (in cubes)strawberries, carrots etc?

Apple, I feel that strawberries definitely get ruined if you freeze them .. they lose their water and with it some nutrients ...

Ginger garlic retain their water so no issues there ..

I have often thought about cooking in mass quantity like once or twice a month a freezing bug I wonder if this comprises the nutritional value. the main goal is to make sure that your family is eating healthy.

cooked foods - more or less as good once defrosted as before.

fresh foods - possible loss of some nutrients, but not any more so than whatever loss would happen if you cooked it.

a lot of foods will change texture while freezing and defrosting, which may or may not be a good thing. a lot of vegetables get softer and cook faster once gone thru the freeze-defrost cycle. which i personally find useful.

also, if using frozen veggies gets more vegs into your diet as opposed to no vegs otherwise, its definitely a good option.
