KKF, we chill the rice for the following reasons:
- if we try to fry freshly boiled warm rice, they will turn into kheer

- we need really chilled rice for frying so that they dont get cooked from the inside and fry nicely in a drop of oil
- Chilled rice remain separated and dont easily stick to each other ..
- you know that fried rice aroma? that comes only if you have used chilled rice to fry .. warm freshly done rice dont give out that aroma ..
Rice dont become chewy at all .. infact I just keep them in the fridge overnight , my chinese friend told me once that they keep rice for two to three days before they fry them !
