For fried rice, boil some rice and keep them in the fridge overnight.
Next day, prepare the following vegies:
- Chop capsicum
- Shred some carrots
- Corn
- Peas
- Cabbage
All in equal quantities ..
Next, boil some chicken pieces in water , add salt, black pepper a bit of soya sauce and let it all boil. When chicken is done, cool it and shred it. Keep aside
Next, beat an egg, add a bit of salt and black pepper .. fry it and stir it vigourously so that it turns into tiny pieces , similar to the chicken ..
Next steps all to be followed in the wok or a pan on high flame:
Now, in a pan, add a touch of oil, stir fry the cabbage, just a minute or two is enough, take it out and keep aside
Same pan, add in capsicum, stir fry and after a minute or two take it out and keep aside in the same dish you kept the cabbage in
Keep individual stir frying the vegies. When all done
Add in a touch of oil in the pan, stir fry the chicken pieces, add in all the vegies, add the egg .. then lower the flame and add about 3-4 tbspoon of soya sauce, two to three tbsp of vinegar, ajinomoto just half tsp, oyster sauce one tsp, tomato ketchup or paste about 3 to 4 tablespoon .. season with salt and pepper .. if you like spring onions add some at this stage ..
Keep this pot aside ..
Now in a pan, again on high flame, a touch of oil and add the boiled and chilled rice little by little and stir fry them, you will notice this beautiful aroma of the stir fried rice , takes about 3-5 minutes .. keep adding this fried rice into the vegie mix. When done, stir it all and its ready for you to enjoy ..

another tip i came acroos from a Thai friend. When you take the rice out of the fridge, put some oil on your fingers and break up the clumps of rice. the oil will stop your fried rice getting clumpy and will fry the rice nicely too. And use jasmine rice, not basmati

CB, great recipe but i wonder why store boild rice overnight in fridge? wouldn’t it make super hard and chewy? just asking for my own benefit…thank you! ![]()

KKF, we chill the rice for the following reasons:
Rice dont become chewy at all .. infact I just keep them in the fridge overnight , my chinese friend told me once that they keep rice for two to three days before they fry them !
