Fried onions

I am hosting a dawat this Sunday for quite a few people and am trying to get organised and prep what I can beforehand. I need fried onions for a dish and although they are easy to do i just want one less job to do later. How many days in advance can i fry and keep them? I will cook and use them on Saturday, how to store them so they remain crispy?

Fried onionsf or masala base or as a garnishing? If garnishing, I'd do it then, so its fresh. If masala base, then I've made masala 2 days prior and it was fine

I have seen fried onions being sold even in bulk barn, and they don't refrigerate it - they put it in a bin. Even packaged ones at desi stores are just left with other spices. So I am sure they should be okay if you leave them out. If you fry them crisp in fresh oil and spread it out on paper towel to absorb extra oil, definitely, a week.

Uuuummmm I need them for both garnish and the masala. previously when when I made them they are crispy as I take them out onto a sieve and shake to really drain oil well and leave on paper towel , but on day 2 after frying they go soft.
I think Friday it is then. I can't use store ones I'm afraid I don't like the idea of using those ones.

After they cool down n crisp up on paper towel, store them in an air tight container. Should be fine on countertop or fridge if it's to be consumed within a few days.

Sun-dry sliced onions on a paper towel before frying. It reduces frying time and gives a crisp onion (plus less soggy) in half the time.

Sehar and Proto are right. Both techniques are very effective....
sun drying to evaporate as much water from the onions before frying them and then storing them in an air-tight container after.

ok ladies. once dried and stored ... how much of the stuff should be used to prep the next salan ... in other words, what quantity would be equivalent of 2 medium onions?

@ehl-e-chamman - Once fried, I would probably use half the quantity.

it is roughly 3 heaped tbsp ofcrushed brown onions = 1 medium sized onion
