Re: Fresh Oregano and Rosemary

put the whole lot in a freezer bag and place in the freezer and pull off the leaves as and when needed.
Oregano, you can keep in the fridge for a few weeks or freezer for ages .
Add to tomato sauces for pasta
mix oregano, thyme, chilli flakes salt pepper coriander and cumin powder add a dash of vinegar (white wine vinegar) and some garlic olive oil and marinate cubes of meat or chicken.
you can also do this with oily fish like sardines, mackeral etc. (this fish is good for you)
you can grill, barbeque or cook on griddle of frypan (or those george foreman grill things)
Roast tomato (and red pepper soup) soup
take a kilo of fresh tomatoes cut in half put in baking tray, sprinkle with salt, pepper oregano, basil and drizzel olive oil over and bake few splashes of worcester sauce and chilli flakes or slices red chilli
you can do the same with peppers too
wizz it all up in blender, pour in saucepan add a mug or too of water and bring to the boil add a little lemon juice, salt and pepper and a little double cream or creme fresh.
add to roasted med veg (i ve posted the recipe here somewhere)
if you eat ready made frozen pizza sprinkle some on the top before cooking,or sprinkle over homemade pizza
as Ira said, garlic bread...take a french stick or medium size loaf cut in slices but not all the way through, mix 1 third small pack of (soft) butter with a dash of olive oil (to make it healthy;)) salt, teaspoon of chopped fresh oregano/a couple of pinches of dried. and if you have some chopped basil or parsley and finely grated or squashed garlic
mix together, spread over the cut slices and cover whole thing in foil and put in the oven
Beans.
take a can of cannellini beans, a can of flagelet beans, a small can of butter beans, a can of pinto beans. mix together
(you can use two or three cans of different beans what ever they have in the shop even things like chick peas or red kidneybeens and also add sweetcorn if you like)
add one finely chopped small onion few cloves chopped garlic, one dessertspoon tomato puree. half teaspoon of dry oreango or about three or four sprigs of fresh, a couple of pinches of dry thyme or a few sprigs fresh, and salt and pepper, and fresh red chilli chopped or dry chilli flakes
take a cup of white wine vinegar, and about half a cup of olive oil
mix all of that together, pour over the beans and put in the oven for half an hour.
Rosemary
If you make things like roast lamb add a few sprigs to the lamb, make nicks in the lamb and poke the sprigs through into the flesh with a piece of garlic. caook as you would normally.
Rosemary oil
take a clean narrow bottle, pour in extra virgin olive oil, add a couple of sprigs of rosemary and a red chilli and a peice of garlic
leave for a good few weeks, then use to pour over peeled potatoes or squash/pumpkin and bake in the oven.
or chop a sprig and sprinkle over ordinary roast pots
rosemary can be added to lamb curry near the end of the cooking.... not dry curry, the type that has a lot of gravy. when theres is about ten mins towards the end of cooking add about a quarter of a teaspoon or half a teaspoon to it and bring to the boil.
If your family like the taste of rosemary(some people dont), chop finely and add to chapli kebabs, you can do this with oregano too.
Rosemary bread
I dont have the recipe at the mo, if youd like this I'll get you the exact recipe .
both rosemaary and oregano (even frozen)can be placed on barbeque coals and the burning smoke will give the food additional flavour.
basically keep in your freezer and use in any thing you like, Experiment
rosemary is good with meat
and oregano is good with tomato type dishes and goes well with chilli (so if you add chilli try a pinch or two of oregano)
