Fresh cream

Hi everyone! I am trying to make butter chicken, you know the awesome dish that has chicken pieces drenched in creamy sauce? Well one of the ingredients was “fresh cream” and I ran out and bought heavy whipping cream. Thats all I could find at the grocery store. What is heavy whipping cream? Can it be used in place of the “fresh cream” in my ingredient? Thanks for your help!

I always use heavy whipping cream for butter chicken and it turns out just fine!

i wouldnt use whip cream. use sour cream as a substitute. you could pick it up at pretty much any 7-11 type store too if the grocery store is not nearby

Heavy whipping cream is fine. The recipe i use asks for 1 cup of that and 1 cup of milk but i the cream for both (just to get rid of it).

Do you mean the kind that comes in a can and you shake it and put it on top of stuff? cz whipping cream and whipped cream are different (same i mean but different texture)..btw next time i will definitely try it your way, with sour cream.. :smiley:

i've used both heavy whipping cream and light cream. some people even use half and half but it doesn't turn out too creamy with that of course.

Thanks for all your help. Whip cream is the stuff that comes in a can and is sweet and you use it to put on ice creams,pies,etc. That is NOT what I bought. If I had then I would be in trouble, haha. I bout heavy whipping cream which is different. Heavy cream, which is also called heavy whipping cream in many parts of the country, has a fat content of between 36% and 40% (occasionally 42%). Light cream has between 18% and 30% butterfat (but generally averages 20%), and light whipping cream has between 30% and 36% fat. I My recipe asks for sour cream and fresh cream. I shall use both to be as precise to the recipe as possible. I hope it turns out okay I'A, as this is my second time I am having major guests over as a married woman.

An old friend gave me the recipe.. Here it is:

Ingredients needed:
Chicken cut into cubes
tomatoes-4 cups tomatoes (this is if you are making a huge portion for a dawaat, say you and your hubby plus a family of five..I am using only 2 since there are not that many ppl..this is how my friend told it to me according to what she made with her mom for a dawaat)
3-4 Tbsp lemon juice
1/2 cup fresh cream
12 cup melted butter
1/4 cup oil
salt to taste
red chilli powder
haldi (turmeric)
cumin
black pepper grinded
cardamom (6 big pieces)
ginger-grinded fresh (paste works too)
garlic-("")

Cooking Steps:
1. mix dry ingredients and lemon juice and 1/2 cup of water and apply to cubes of meat. Let marinate for 30 minutes.
2.Boil tomatoes in 1-2 cups of water for ten minutes or till soft and tender. Remove skin and seeds and keep tomatoe puree aside.
3. Seperately heat the oil and add the marinated meat. Stir fry about five mins.
4. Add tomatoe puree and milk. Cover and cook on low heat for about 15 mins.
5. Stir in fresh cream. Add the melted butter and remove from heat and serve!

I have to go make this now as guest shall be here later tonight. Some time next week I will let you all know the results as I am busy and wont be on here much. P.S.-I just realized there is NO sour cream in this recipe and I went out and bought it! I think I remembered sour cream cuz my khala uses it..she makes the best butter chicken. I'll call and get her recipe for next time..

how about subsituting heavy/light cream for coconut milk? less fatty and less calories. cream makes the recipe too rich and too heavy.

im tired of having to buy the shan masala box just for hte marinate, so i like being able to marinade it with the stuff i have at home.

I use heavy whipping cream for butter chicken and all other recipes that need fresh cream as an ingredient and they turn out great. I wouldn't use sour cream for this.

LOL, in Pakistan we only get one kind of cream in stores and we use that in every dish that requires cream, meethi ho ya namkeen!!! :D

A typo, for sure.

I will use this recipe… previously for butter chicken i have been using ‘double cream’… and it worked quite well…(btw thanks for the recipe from before, sara :))

^ ha ha yes a typo!! its supposed to be 1/2 cup butter. So, I was supposed to make this for my guests last week but then my hubby insisted we order food out from a local Indian place which we ended up doing. So now I will make this on Friday and report after how it went.
