I think ‘fresh cream’ is just a fancy name for unwhipped cream in Pakistan like they call sodas ‘cold drink’
Try your recipe with unwhipped milk cream the one you get in those small 8 ounce (I think)cartons. If heavy whipping cream spoilt the taste try regular whipping cream but unwhipped.
Cream is the fatty fraction of milk (any milk, all milk, including cows and buffaloes and goats). When milk is fresh and untreated it rises to the top.
Fat in milk is encased in membranes and thus doesn't clump even when it rises up. Heat treatment destroys these membranes and causes some sort of agglomeration.
Whole cow's milk contains about 3.5 - 4.5% fat depending upon the breed of animal.
Cream is an emulsion of fat globules suspended in milk. When the emulsion is reversed, through increase of acidity, agitation or other methods, butter is made which is milk or water globules suspended in fat (fat about 90-95%)
Malai is clotted cream. Clotted because the high heat treatment makes it clot. And the fat content of commercial clotted cream tends to be around 60%
Cream is separated by modern dairy technology from milk by the use of a centrifuge. Most commercial cream is then pasteurised, some of it is sterilised.
Double cream or whipping cream contains min 35% fat but you can use heavy cream which can go up to 45% fat.
Single cream or cooking cream is about 22-25% fat and is generally the type used for cooking savoury dishes.
Half and half is half whole milk and half "cream" so my American friend tell me but they don't tell me the fat percentage of the final product. I think they used single cream so the result is about 15% fat.
Homogenised milk has been treated to distribute the fat globules in the milk evenly by forcing the mlk through tiny nozzles. The cream can no longer rise to the top, but if you heat it a small part may come up.

Bottom line, the more fat you use in the cooking the better it will taste :).
i love this one…there are more brands u can find in regular stores…just spread it on a toasted slice of bread and sprinkle some sugar and yummyyy

my ami uses that duble cream stuff u use with fruit like strawbery or wat ever its liquidy not liek that moose type stuff. u should be able to find it with out any problem wear some glasses kuriay :p
