French Fries or Chips

Please share your favorite and best-est French Fries recipe.

People have some unique tips on how to make the perfect fries. Some say freeze the cut potato in a freezer and then fry, etc.

Real chips - made with real potato. None of that corn/potato starch crap that gives you 'fries'

I know someone who dips them in a batter (plain flour or corn flour, salt, black pepper I think) and then deep fries.. I asked her couple of times but she always dodged the question, I guess she didn’t want to share the secret to her french fries.. people :rolleyes:

Does anyone know about that batter?? probably that is the key!

Hmm, I always seen on TV that the chefs chop n wash the potatoes, then dry. Then fry them till they r a little soft but not brown. Then drain. When they r cold, they re-fry them. Apparently it makes them crispy.

Maybe if u spread the cooked chips on a baking tray and placed into a hot oven, this might keep them crispy?

GTG , yes i know that batter ... its usually just to coat the fries sprinkle by hand some self raising flour , half a teaspoon of cornflour , salt , pepper and a drop or two of lemon juice ...

and leave it aside for a few secs ... it will absorb most of the moisture from the fries ... make sure its not too liquidy .. if it is add a bit more maida or corn flour ... (it is bound to leave water coz you added salt to it )

then add then into the oil one by one or they will just stick together !

The fries should be cut the right size. If too thin they turn crispy, if too thick then they will be soft and soggy in the middle. So cut the right size. Then half fry them. When you are ready to eat, fry them for few mins till done. I find the chips look golden and have the right mix of crunch and softness.

I didn't think you would need a 'recipe' for chips/fries, but more a method?

I usually use frozen chips for the thin fries and then using maris piper potatoes I make home made chips for the fatter chips.

With both I just heat the oil, throw the fries/chips in when the oil is hot enough and cook on am edium/high heat. Once they have cooked through (I usually check by squeezing one) I up the heat for the last minute or so and crisp them up. Works every time.

Obviously for the home made chips you will need to cook them for longer - the key is not to throw them in to oil that is too hot as this will cook the outside quicker than the inside!

one variation i love is... u cut wedges.. not too fat and not too thin.. then u boil them for 5 mins.. drain.. and put in fridge for 1 hour.

take out... coat with chickpea flour, crushed zeera, black peppercorn.. seasalt (crushed).. and red chilli powder. refrigerate again for another 1 hour.

take out and deep fry..

and for ppl complaining bout fries going limpy.. u dont have to go thru the drain and the fridge and the god knows what else.. you are adding way too many fries to the broaster or deep frier... add just enough that its full but not crowded.

ive never had limpy fries..

take out in a sieve and then spread out on kitchen roll.

Thanks all for the tips. It all fries down to quantity of wedges and the temperature of oil. If those two things are exact, the result is restaurant style FF.

u can bake with red chillie powdered sprinkled on top thinly cut potato wedges. taste awesome and yeah they are still french fries even though they are baked. adn once baked sprinkle lemon juice or chaat masala watever u wana add and enjoy!
