I know you’re supposed to put them in a single layer, but my freezer doesn’t have that much space… I was thinking of emptying the freezer to make room for them, freeze them, and then put them in a bag and store it…I’m only concerned about the stuff I have in my freezer that I would have to take out for that duration… would the meat /chicken/fish/veggies still stay safe if I put them in the fridge for just that amount of time?
I just made a batch of chicken wontons, and it only took about 15-20 minutes for them to sufficiently freeze up. They are pretty small though, so if your making full sized spring rolls, probably about 30 minutes
I learned a trick from a friend, which works well. I make the dough myself and then I make thin rotis of it. I will roll it out, heat the pan, spread the roti on the pan and no flipping side .. just when it turns brownish .. sorta like when you make the first flip when making the rotis, I remove it on to a plate. This way its easier to make the samosas, because the roti is easier to handle plus when you freeze, you can just put them in bags and in the freezer. No sticking to each other.

I bought the dough... would that tip work with the store bought pastry sheets?
No, don't cook the pastry sheets. It will make them dry and brittle and hard to work with. Khattichic is right, 30 mins in the freezer should do the trick...plus, they kind of become dry on the outside if you leave them uncovered in the freezer (when they're dryish they won't stick together when you put them in a bag later), so you don't have to keep them in there as long.

Are they recipe and pics in the sticky? I really want to try this. Do you shape like samosa triangles, cigars or wonton shape? I think they would taste awesome with Maggi chilli garlic sauce or hot and sweet sauce.
What i do to store the samosas etc is take a normal disposable plate put samosas in one layer then put cling wrap on it and put other layer and then another layer, with these three layers atleast 35 to 40 samosas can come and the normal disposable plate does not take much space, my freezer is also full of meat anf frozen items but it was most convenient way to be at safest side let them freeze for an hour and then you can put them in any bag.
