Instead of freezing onion why not make masala and then freeze masala. My cousin does that and the food does not taste different.

We only freeze the browned onions not the fresh ones. I do leave them in the refrigerator for a few days for re-use. The gravy turns out great w/ the browned onions for me!!

Ok update on the frozen onions, Itoday I bought some chopped n frozen onions from Asda, used them in an omelette, they were fine. Wait till I use them to make some salaan n will post the result here.

Ok made some Biryani. It was Ok. I am not 100% staisfied with the frozen onions but will keep using them as it saves a lot of time.

Ughh..they are nasty ! No doubt. I think the oil they cook them in is also rotten because they smell horrible. The desis probably keep re-using the oil !
