I freeze koftay raw, and as you are making the salan, I microwave them for about 5 minutes, and then add them to the salan.

OP, you can make a meat salan (beef/veal/goat) and then portion it out, and when you want to use it add any veggie you would like (potato, bhindi, palak, kadoo, etc) while reheating on the stove.

I freeze raw koftas, they don’t break at all. The key is to make nice gravy and let them slowly cook in the gravy. You don’t have to defrost them.

Neither I steam them nor fry. Just put them out of freezer for like half an hour. Make gravy and let them cook in it on low heat. Alhumdulillah they have never broken

What about rice dishes like biryani, plow etc. Some people say rice is ok to freeze, others say no. I know you can make the salan base and freeze that and then just add the rice and finish it off, but just want to know if its ok to freeze the leftovers as well?

my last week freezer stock was bhonofied qeema divided in 3 portions, pizza dough divided in 4 portions, pigeon eyed peas consumed half the day I made it and half was frozen, made dosa aata froze half, made rasam and froze half of it. Other than that I froze two loaves of bread, dough for cinnamon buns, and Zucchini blueberry loaf.

I made dosa yesterday with aalo sabzi south india style, I took one portion of qeema out and made stuffed zucchini with tomato sauce, it was yummmm. I wish I took the pic. I will make pizza for movie night tomorrow, one cheese and one with hot peppers, onion and pineapple.

@mindnighteyes the problem with frozen rice is that on heating they break and dont look good enough to present as per our desi protocol, but if you are ok with that then you can freeze rice too. However in my personal opinion frozen biryani does not taste that good. Moreover im not in very much of freezing everything. Frozen things can never compete fresh items in taste and nutrition at all
