I use this recipe:

We go meatless; often use frozen hash brows instead of potatoes. Feel free to add whatever seasonings you prefer , adjust here and there. It is a very versatile recipe and can be scaled accordingly.
When freezing, I slightly warm up a tortilla, fill, and roll up. Wrap tightly in cling wrap and foil, and freeze. Not had a problem with these at all. My children unwrap the foil, and put it in the microwave with the cling wrap on.

I love her recipes, she is a superwoman, honestly, living on a farm, homeschooling kids, tv shows etc etc etc etc
