Ok so I’m going away next month and wanted to save a few dishes for my husband.
What are some good dishes that come out well when defrosted?
Are there any specific containers I should look into?
Also, I made kabab mixture yesterday but I don’t feel like having them again today or tomorrow…How long will they be good for if i keep them in the freezer?
when I have to freeze salans,I go for chicken (karahi,qorma), keema (with either peas and carrots,or achari keema or just plain keema), daal (plain moong/masoor,and chanay ki daal with gosht) and meat salan (shorba style).They all freeze well.
I freeze them in either the glad take-along containers or the ziploc bags.I find the bags better...take lesser space in the freezer and saves the hassle of washing the containers.
yogurt containers should be fine.Although the cheap plastic containers (the ones from the dollar stores ) have a weird smell,or so I think …so I never use those…
I personally prefer the ziplocs for freezing anything.
It depends how much you can cook in a day.Once I cooked loads in mere 3 days,before going to Pakistan…it wasn’t the wise thing to do but I was jammed at that time…
When I wanted to freeze a few things before the baby came,I used to cook a little extra every time and freeze it…I did it over the span of 2 months…
I am not sure how I will do it this time before I leave…

Frozen kababs should be good for a couple of months.
I use the usual yoghurt or ice cream containers and the food freezes fine ... Most of the meats freeze fine . Its just dishes that have cubed potatoes or cubed vegetables that dont freeze well ... so if you can try to avoid them , everyting else should be fine.
Kebabs freeze very very well .. you can start a week before ... or even two weeks before ... Frozen food can be good for a few weeks ...
you know you can also freeze the rotis ... like make them, then let them cool down. then wet your hand with warm water and pat on each roti on both sides , layer then up, cover and freeze immediately. you hubby can simply take it out of the freezer , pat some water on it again and microwave , perfectly soft roti will be awaiting him :@:

I tried the actual roti thing works like a charm ... absoloutely awesome. As far as the type of boxes are concerned do not use the dollar store ones. fruits just tastes and smells weird in them. Someone else recommended using ziplock bags, they are awesome at storing food. Trust me I store a week's worth of food every week so I know. You can also use glass stuff the pyrex ones. They work really well too.
