Foul smelling foods

Why do people cook cabbage , mooli , gobhi etc which give such a foul smell when they are being cooked or warmed up ?
I know food is a matter of taste , one person’s delicacy can be offending to others but I am talking about desi folks who all admit that mooli , gobhi , bund gobhi all smell bad when they are cooked or warmed up.

It is roman urdu iss lee-a sub chalta hay. I knew someone will say it is gobi not gobhi but in Urdu it has an hay in it.

I pointed it out cuz u usually have this proper roman urdu as “iss lee a” which… shud be “iss -lee-ay”
