I don’t, but my husband does. I also was reading the other thread and realize quite a few folks prefer it over regular potato.
Here’s a great recipe shared by a Somalian friend.
1 large sweet potato skinned and cut into cubes.
1/2 can of coconut milk
a pinch of salt
1 tsp sugar
Boil sweet potato and when done (make sure water has dried up), mash in the pot along with the rest of the ingredients. Serve as a side with steak, etc.
Another way to have it:
Bake a sweet potato (rub skin with some olive oil, place in a brown paper bag and microwave), slit, top each side with butter and coarsely ground pepper.
My mom likes it savory. Baked in the microwave...put a few pats of butter on it....and sprinkle some chaat masala/lemon juice.
Me....I prefer them sweet. Baked in the microwave. Pour maple syrup on top....sprinkle some cinnamon and crushed granola. Don't really like the mushy texture of SP...so I gotta have some crunch to counter it.
Oh man sweet potato fries are the best! Cut them up, soak them in water and bake in the oven! We eat them with this mayo dip (mayo and laal mirch). it's YUM!
I tried eating them regularly. But it’s not something that comes easy to me. I’m not overly fond of the mushy texture or the sweet taste. And yes, I’ve tried them as oven-baked fries as well…and liked them the least of the ways I’ve prepared SP. They are packed with nutrients though.
I think I’ll try it in yogurt-based chaat in the future. Substitute potatoes with SP, add yogurt, chanay, tomatoes, garam masala, etc.
Sweet potato is cousin of what we call in desh , skakar qandi , So you can make kheer with it , I loved it when my ammi used to make shakar qandi key kheer.

Niks, the sweet potato recipe you posted is similar to the Burmese one i make, but has slightly more ingredients (chillies, garlic, onion, cumin, black pepper, ginger, soy sauce, lemon juice)
